On the menu this week is another Whole30 recipe for you guys. Because so many of you are doing a January Whole30 I am really trying to give you what you need to help get you through this round. And congrats because you are officially half way done! This week’s recipe is Whole30 Cream of Potato Soup. This might just be the best soup I’ve ever made. At least in my opinion. And that’s saying a lot because I’ve got some other really great soup recipes on here like Whole30 Curry Butternut Squash Soup, Roasted Red Pepper and Squash Soup (also Whole30 compliant) and Simply Sweet Tomato Soup (also Whole30 compliant).
If you follow me on Instagram you would have already heard about this, but I found out why I’ve been so sick recently. Turns out I have an infection called C.diff. It’s a really brutal gut infection. So I am now on day 6 of antibiotics, and honestly not seeing a great improvement so far. It’s also made my acne flare like crazy (it’s so annoying!) as well as my KP which hasn’t happened in years. I am also loading up on the probiotics and saccromyces to try and kill this thing as soon as possible. I am on a 14 day course of vancomycin so hopefully things start to turn around soon. I am pretty darn tired of being sick. I’ve also been on call all week so I have still had to go to work and try to function. The joys of being a doctor sometimes: no sick time and no one to cover for you if you are sick. Doctoring isn’t everything it’s made out to be that’s for sure. Most of us, at one time or another, have sacrificed our own health for the health of our patients. It’s sad but true. I was supposed to have a Beautycounter event over the weekend but had to cancel it unfortunately. This darn bug is starting to ruin my life. I’ve also not really been able to workout for about 2 weeks now and that’s also starting to drive me crazy. My body is craving movement, yet it’s too tired and weak to actually be able to do it. Again, hopefully I start to feel better soon so that I can get back to all the things that I love to do.
While I’ve been sick I’ve been doing a lot of reading and Netflix watching. I am almost finished the book, A Man Called Ove. Have you read it yet? If not you need to! It’s so good! Like really, really good! Probably one of the best books I’ve read in a long time kind of good. I have also been watching The Crown on Netflix and totally loving that. So hey, if I am going to be sick I need to find something to do right? What books and shows are you loving right now? Hopefully I’ll be better soon and not needing your suggestions but it doesn’t hurt to ask, just in case.

Now, I should just mention that when the paleo diet was first created, potatoes were not allowed on it. However, there are many paleo experts, including myself, who now allow people to eat non-GMO potatoes on the paleo diet. As long as you tolerate them that is. I personally tolerate white potatoes better than sweet potatoes so in the last year I have started incorporating them into my diet more often. However, my one rule of thumb when it comes to food is to always listen to your body first. If potatoes do not agree with you, do not eat them. I just don’t want anyone getting upset that as a paleo blogger I am posting this potato recipe so I felt it important to explain why. So please, no getting angry with me. Do what’s best for you and your needs.

Whole30 Cream of Potato Soup Recipe
1 package nitrate and sugar free bacon (get FREE bacon for a year here)
3 lbs organic yellow or white potatoes
2 red apples of choice, chopped (I used Gala)
1 white onion, chopped
3 cups bone broth (make your own or buy here)
2 cups full fat coconut milk (this is the brand I use and love)
1/2 – 1 tsp sea salt (to taste)
1/4 – 1/4 tsp ground black pepper (to taste)
Optional: chopped chives (for garnish)
1. Using a medium sized frying pan, cook your bacon until crisp
2. While the bacon is cooking, fill a large pot with water and place on medium heat on the stove
3. Clean the potatoes and chop into quarters (leave the skin on – this is where most of the nutrients are located)
4. Once the water in the pot is boiling, add the chopped potatoes
5. Turn the burner down so that the potatoes cook at a low boil for 25-30 minutes, until soft
6. While the potatoes are boiling, remove the bacon from the frying pan and use the grease to saute the chopped onion and apple together, until the onion is caramelized and the apples are tender (~10-15 minutes)
7. Once the potatoes are done, drain the water from the pot
8. Transfer the onions, apples and bacon fat to the pot with the potatoes
9. Add the remaining ingredients to the pot
9. Using your immersion blender (this is the one I use and love), blend the ingredients until smooth
10. Optional: Top with chopped bacon and chives
11. Serve and enjoy!
