I am so excited to share this week’s recipe with you guys. Whole30 Slow Cooker Chili with Blueberries. Yes blueberries! Am I a genius or what? Okay, maybe don’t answer that question, but I was trying to think of something that would resemble black beans, without actually having the gut aggravating effects that beans do. And blueberries were the perfect solution! It gives this chili a little something special. I really do think you are going to love it. You are going to love it even more when you realize how simple this chili is to make because it’s done in the slow cooker. Basically throw all the ingredients in there and let your slow cooker work it’s magic. Easy peasy.
Friends! Sorry for all the silence around here lately. Sadly this C.diff I have has turned out to be such a stubborn beast to get rid of. Every time I go off antibiotics things just come back with a vengeance so I am now on my third round of vancomycin at four times the usual dose. I have spent a fortune on antibiotics this month – so far around $800. Thank goodness I have some drug coverage. Without it these antibiotics would have cost me over $2500! How crazy is that?
If this doesn’t work I will be going into a clinical trial for either a stool transplant or an experimental antibiotic. I will do anything to be better at this point but if I had to choose I think I would pick the stool transplant. It’s almost been 2 months that I have been sick now. 2 months! It’s crazy. And right now it’s the simple things that I am missing the most. Things like being able to eat real food, do a workout, leave the house without fear, sleep through the night and go to work. I am doing my best to take things one day at a time and accept that this experience will just make me stronger. Even as recently as a couple years ago I would have been stressing about the fact that I have hardly worked out in 2 months and have not been able to eat well. But lately I have gotten a lot better at rolling with the punches and realizing that a few months off will not break me. It will take me time to build my fitness back to where it was, but that’s ok. Right now what my body needs is rest. Lots of rest. And bone broth. And Netflix. Thank god for Netflix. I have watched so much television the last two months it is crazy. I feel like I am starting to run out of things to watch though, so if you have suggestions for me please let me know. But if you are looking for some suggestions I highly suggest: This is Us, Mind Hunter, Imposters, Grace and Frankie, Gilmore Girls (always a classic), Shameless and I just started watching How To Get Away With Murder. I will keep you posted on whether I like it or not.
Do you like chili? I love chili! Growing up I used to request my mom’s chili all the time. However, since going paleo and removing all beans from my diet, having traditional chili has been a little more challenging. I do have a couple other paleo and Whole30 compliant chili recipes on the blog including my Three Meat Raspberry Chili and Texas Slow Cooker Beef Chili, both of which are also pretty darn delicious. But neither have anything in them that resemble those beans that define a classic chili. So I was determined to think of an ingredient that would make this chili look like a more traditional chili recipe. And blueberries were my solution! This Whole30 Slow Cooker Chili with Blueberries is loaded with so many healthy ingredients. Ingredients like grass fed ground beef, bone broth, four different kinds of vegetables plus blueberries. Grass fed beef is actually one of the healthiest foods on the planet. Loaded with vitamins and minerals and with an omega 3 to 6 ratio of 1:1 to 1:4 it is a really anti-inflammatory food. Just don’t confuse grass fed ground beef with the regular ground beef that you find in the grocery story. They are completely different foods. The ground beef that you find in the grocery story that comes from factory farmed cows is actually really bad for you. I wrote an entire post on this topic called The Biggest Mistake You Can Make On The Paleo Diet. If you haven’t, I highly suggest you read it.
Bone broth is also one of the best things you can include in your diet if you are looking to improve your health. It is great for gut health, skin health, nail health and hair health. It is also loaded with vitamins and minerals. Again though, make sure you aren’t making your bone broth with bones from factory farmed animals. You need to be using grass fed beef bones or pasture raised chicken bones. This is crucial! And if you aren’t quite ready to make your own bone broth yet I highly recommend getting it from Kettle and Fire. All you have to do is order online and they will deliver high quality bone broth right to your door! How convenient is that?

Whole30 Slow Cooker Chili with Blueberries Recipe
2 TBSP cooking fat of choice (coconut oil, ghee, bacon fat are all great options)
2 lbs grass fed ground beef (have this delivered right to your door by ordering here)
2 cups bone broth (make your own or buy here)
2 cups fresh blueberries
5 medium sized tomatoes, chopped
5 celery stalks, chopped
5 carrots, chopped
3 sweet bell peppers, chopped (I used one yellow, one orange and one red)
1 TBSP organic cacao powder (omit for SCD) – buy here
1 TBSP dried oregano
1 TBSP dried parsley
1 tsp ground cumin (I use this brand)
1 tsp sea salt
1/2 tsp chili powder – Note: use pure chili powder, not a mixed spice chili powder – buy here
1/2 tsp paprika
1/2 tsp ground black pepper
NOTE: If you find this a little spicy simply add 1/4 – 1/2 cup of full fat coconut milk (as needed based on your tolerance)
1. Place a medium sized pan on the stove on medium heat
2. Add the cooking fat and allow to melt
3. Add the ground beef to the pan and cook until browned, breaking the meat apart as it cooks
6. Cook on low heat for 8 hours
7. Serve and enjoy!
Optional topping ideas: Chopped avocado and cilantro
